Chickpea Avocado Salad
I love fresh ingredients, but salads with a lettuce base aren’t always my first choice. This salad is perfect because it’s high in protein and full of flavor, plus no lettuce for me! The best thing about this salad is you can add or take away anything you want. My fiancé added chicken to it! It’s so quick to make and holds over really well if you don’t finish it all (except the avocado of course). You can always leave the avocado out and cut it fresh whenever you plan to eat it.
